Food Industries:

This is usually done to obtain improved particle size during precipitation of the pigment to control pigment aggregates and wetting qualities and to control consistency and setting. Printing industries:

The most common printing industries nowadays are the “planographic offset lithographic” method. The process works by sensitizing a part of the printing plate so that it will accept grease, oil or printing ink. An image is drawn or transferred onto an aluminum or zinc plate or etched with a solution of Gum Arabic, water and nitric acid. This area is known as oleophilic area, whereas the not sensitized area is called hydrophilic. The hydrophilic area accepts water and therefore does not accept printing ink. If the plate is demanded later, ink will stick to the olephilic image area, but not the most of the surface and therefore copy the color to paper when running of offset litho process. Gum Arabic acts as a so cold sensitizer.
